Although I am awaiting for my first Keith Smith binding book (binding without glue) I thought I would feature a site that I was told about when I was in school...This to that.
It will help you figure out what adhesive could be best depending on what you are gluing together. Just enter the two different items you want to adhere together and the site will give you suggestions. I believe this site was created by former OCAD students, if I remember correctly.
